Suppliers

Our suppliers are important to us, not just for providing high-quality ingredients but also for their commitment to sustainability. We are lucky to call many of them friends.

Flour: We use Shipton Mill organic flour for all our baked goods as we believe regenerative organic flour is best for us and best for the planet. The Gloucestershire-based family-run mill works with farmers who promote biodiversity and who look after the soil. Their strong belief in protecting wildlife and allowing soil to thrive naturally means the mill is the home of regenerative organic flour.

Butter: High quality butter is critical for our pastries so we have to make sure it’s the best. Because we are committed to using UK ingredients wherever possible we use Estate Dairy who produce sheets (perfect for pastry lamination) of cultured butter made using milk that comes from grass-fed cows, form farms such as Bickfield Farm in Somerset.

Fruit and veg: Seasonality is key at Heath Street as not only does fruit and veg taste better if it is in season but it is kinder to the planet, with fewer food miles and no need for high-intesive energy to grow produce. As much of our fruit and veg as possible comes from our biodynamic kitchen garden in Gloucestershire, whether it’s fresh salad, rhubarb for a tasty pastry or raspberries for homemade jam. We also source fruit and veg from Natoora who provide seasonal, diverse produce in line with our ethos.

Meat, dairy and fish: Animal welfare and closed-loop farming systems are important to us when it comes to meat and dairy products, which is why we only work with farmers who produce grass-fed animals and make biodiversity a priority. We chose to use smoked trout instead of salmon as our friends at ChalkStream produce it much more sustainably (rated ‘best choice’ by the Marine Conservation Society), and is just as delicious. Our milk comes from family-run Estate Dairy who work with forward-thinking farmers to produce the highest-quality milk and cream from their pedigree Guernsey cows tailored to the specific requirements of best quality coffee.

Oat milk: We only use oat milk as other dairy alternatives take a much higher toll on the environment and oats grow prolifically in the UK. Minor Figures is London-based and they get their oats from the UK, are carbon neutral and their oat residue goes towards livestock feed.
